Dining Hall Uses CAES-Grown Ingredients for Earth Day

Williams Dining Hall, operated by Sodexo, celebrated Earth Day on April 22 with a lunch menu that featured ingredients grown by the CAES.

The ingredients grown by Aggies included basil, oregano, red Russian kale, broccoli, cinnamon basil, sweet potatoes and ginger grown at the Urban Food Platform, Reid Greenhouse and the Student and Community Farm.

The Urban Food Platform is an outdoor small-scale urban food production system developed on the grounds surrounding the campus greenhouse. The 4,000-square-foot Reid Greenhouse has three bays with computerized environmental control. The 3-acre Student and Community Farm is an experiential learning space at the University Farm.

Shengmin Sang, Ph.D.

A May 21 story in the Greensboro News & Record featured the work of Professor Shengmin Sang, Ph.D., a researcher at N.C. A&T’s Center for Excellence in Post-Harvest Technologies in Kannapolis. “Increasing evidence shows that many chronic diseases are preventable, and diet plays a very important role in disease prevention and treatment,” Sang told the newspaper. “My lab’s over-arching goal is to develop safe dietary regimens to prevent and/or treat the development of chronic illness without incurring the harmful side effects that occur with the use of so many of today’s pharmaceuticals.

“Studies show that the general public prefers dietary regimens, instead of drugs, for preventing or treating chronic diseases.”
